Uber-Berry Muffins by Better Homes and Gardens


I have made these two times now, and both of those times they came out looking and tasting delicious. If I had to rate these a 1 out of 10, I would have to rate it a 10. The whole family, in including myself, love these muffins! I definitely will be making these again soon!

Uber-Berry Muffins

"Perfect muffins aren't overly sweet, have a fluffy texture and golden-brown domed tops, and are best served warm."
2 cups all-purpose flour 

1/4 cup granulated sugar

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2/3 cup buttermilk

1/2 cup sour cream

2 eggs

5 tablespoons butter, melted

1 cup fresh blueberries and/or raspberries 

1/2 cup dried tart red cherries, blueberries, and/or cranberries
 
Turbinado sugar (optional)
Directions
  1. Preheat oven to 400 degrees F. Grease twelve 2 1/2-inch muffin cups; set aside. In a large bowl stir together flour, granulated sugar, baking powder, baking soda, and salt. Make a well in the center of flour mixture; set aside.
  2. In a 2-cup measure whisk together buttermilk, sour cream, eggs, and 3 tablespoons of the melted butter. Add all at once to flour mixture. Gently stir just until moistened (batter should be lumpy). Add blueberries and/or raspberries and dried fruit; gently fold in.
  3. Spoon batter into prepared muffin cups, filling each three-fourths full. Bake for 15 minutes or until golden brown. Remove from oven and brush with remaining melted butter and, if desired, sprinkle with turbinado sugar. Cool in muffin cups on a wire rack for 5 minutes.
